Mario, for as much as we love him, was frankly being a bit of a pain in this cutscene. To him, Princess Peach suddenly stopped being the woman he loves and became a prize to be won, a trophy with which he resorted to flowers to triumph over a rival and win her heart.

Bowser wants to take over the Mushroom Kingdom at any cost. He has planned it not only in the video game series but spin-off comics. Bowser has gone so far as to try and hypnotize her to complete the ceremony. By marrying Peach, the Koopa will become King of the Mushroom Kingdom.
It might that since then, in the “canon” Mario timeline, that Peach has divorced Andre, or that Peach only married the Prince to further the goals of the Mushroom Kingdom, much like Bowser continually tries to do for his Koopa Kingdom.
Luma is then found by Princess Peach, who invites Mario to her castle during the Star Festival to show him her discovery. After the hero is sent flying off into the cosmos by Kamek’s attack, Peach sends Luma after him as her castle is towed away by Bowser’s forces to the center of the universe.
In summary, the end of Super Mario Odyssey proves that Peach needs something more than what Mario or Bowser can give her: control. Eventually, if she has any intelligence, she will marry Luigi.
